Ingredients

1 cup self-rising flour
1 cup flour
2 cups rolled oats
2 tbsp sugar
3 cups buttermilk
2 None eggs
None None Crispy bacon, to serve
None None Figs, to serve
None None Maple syrup, to serve
Preparation

Sift flours into a large bowl. Stir in oats and sugar. Whisk buttermilk and eggs in a medium bowl. Add to flour mixture, stirring to form a smooth batter. Cover and let stand for 30 mins.
Spray a nonstick skillet with no stick cooking spray and heat on medium heat.
For each pancake, pour 1/4 cup batter into pan. Cook, in batches, 1-2 mins until bubbles form on the surface. Turn over and cook the other side 1 min, until golden. Transfer to a plate. Cover and keep warm. Repeat with the remaining batter.
Serve pancakes with bacon and figs, drizzled with maple syrup.
