Vegan Apple And Cinnamon Cupcakes - cooking recipe

Ingredients
    1 tsp lemon juice
    2 None apples, peeled, cored and grated
    4 tbsp all-purpose flour
    4 tbsp sugar
    3 tbsp rolled oats
    8 1/2 tbsp soy margarine
    7 oz marzipan, grated
    1/2 cup maple syrup
    1 3/4 cups wholemeal spelt flour
    1 tsp ground cinnamon
    1 None vanilla pod, halved lengthways, seeds scraped out
    2 tbsp applesauce
    2 tsp baking powder
    1 tsp baking soda
    2/3 cup almond milk
Preparation
    Preheat the oven to 325\u00b0F. Line a 12-hole cupcake tray with paper liners. Drizzle the lemon juice over the apples.
    Combine the flour, sugar, oats, 3 1/2 tbsp margarine and 1 tbsp water with the dough hook of a mixer, then use hands to crumble. Chill.
    Beat together the marzipan, maple syrup, spelt flour, cinnamon, vanilla seeds, applesauce, baking powder, baking soda, almond milk, remaining margarine and pinch of salt. Stir in the apples.
    Spoon into the cupcake liners and sprinkle over the oatmeal crumble. Bake for 25 mins, until a skewer comes out clean. Allow to cool on a wire rack.
