Grilled Hickory Pork - cooking recipe

Ingredients
    3 tbsp olive oil
    1 tbsp hickory barbecue rub, like McCormick Grill Mates Cowboy Rub
    1 tbsp mixed chopped fresh herbs
    2 tsp minced garlic
    1 (6-7 lb) boneless pork loin roast
Preparation
    Preheat grill.
    Whisk together olive oil, seasoning mix, herbs and garlic. Season pork roast then coat in oil mixture. Grill on the coolest part of grill, covered, for 1 hour, or until a thermometer inserted in the thickest part reads 160\u00b0F, or until cooked to your liking. Let rest for 15 mins before carving.
