Mediterranean Pork Tenderloin - cooking recipe
Ingredients

1 tsp olive oil
150 g pork tenderloin, sliced into medallions
4 None cherry tomatoes, halved
1 None spring onion, sliced
1 tsp balsamic vinegar
Pinch None sugar
20 g Parmesan shavings
1-2 sprigs basil, leaves picked
Preparation

Heat oil in a large frying pan, add pork medallions and sear for 7-10 mins, turning halfway, until browned and cooked through. Remove from pan and wrap in foil. Add tomatoes and spring onion, cook briefly, then deglaze pan with vinegar. Season and add a pinch of sugar. Arrange pork medallions on a plate with sauce and garnish with Parmesan and basil.
