Braised Beef Brisket - cooking recipe

2 1/4 lb beef brisket, trimmed, cut into 1 inch pieces
2 tbsp vegetable oil
1 None Spanish onion, thinly sliced
2 cloves garlic, minced
3/4 inch fresh ginger, grated
2 tbsp fish sauce
1 tbsp dark soy sauce
1 tbsp light brown sugar
1 tsp five-spice powder
2 (4 inch) stalks fresh lemongrass, halved crosswise
5 oz green beans, coarsely chopped
3/4 cup crushed peanuts
1/4 cup loosely packed fresh Vietnamese mint leaves
Preparation

Heat 1 tbsp oil in a large saucepan over high heat. Cook beef, in batches, until browned. Remove from pan.
Reduce heat to medium and add remaining oil to pan. Cook onion, garlic and ginger until onion softens. Return beef to pan along with fish sauce, soy sauce, sugar, spice mix, lemongrass and 2 cups water. Bring to a boil then reduce heat and simmer, covered, for 1 hour 15 mins, or until beef is tender. Discard lemongrass. Add green beans and 1/2 of the nuts. Simmer, uncovered, for 15 mins. Season to taste.
Serve beef, sprinkled with remaining nuts and mint leaves.
