Chicken And Vegetable Pasta - cooking recipe
Ingredients

1 lb fusilli pasta
2 tbsp olive oil
1 None onion, sliced
1 clove garlic, crushed
8.75 oz chicken breast, thinly sliced
4.25 oz broccoli florets
1 None red pepper, seeded and sliced
1 None zucchini, halved and sliced
1 x 14 oz canned chopped tomatoes
1/2 cup chicken stock
.5 oz basil, roughly chopped
1.5 oz Parmesan, shaved
None None Bread or salad, to serve
Preparation

Cook the pasta according to package instructions. Drain and return to the pan.
Heat the oil in large frying pan over medium heat. Saute the onion and garlic for 1- 2 mins, until softened.
Add the chicken and cook, stirring, for 2- 3 mins. Mix in the broccoli, red pepper and zucchini and cook for a further 1-2 mins. Stir in the tomatoes and stock and simmer for 2-3 mins more, until vegetables are tender.
Add the sauce and chopped basil to the pasta in the pan and toss well to combine. Season to taste. Top with Parmesan shavings and serve with chunks of crusty bread or green salad.
