Three Cheese Tart - cooking recipe

Ingredients
    1 sheet frozen puff pastry, thawed
    1 1/2 cups ricotta cheese
    1 cup crumbled feta cheese
    1/4 cup grated Parmesan cheese
    3 None eggs
    1/4 cup heavy cream
    1 None lemon, grated peel only
    2 tbsp pine nuts
    None None Salad, to serve
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease a 9-inch tart pan with removable bottom. Line the pan with the pastry sheet, cutting and joining to fit, as needed. Trim the edges and refrigerate for 15 mins.
    Bake for 15 mins, until puffed and lightly golden. Press down to flatten the bottom.
    Combine the cheeses, eggs, cream and lemon peel in a food processor; process until smooth. Season to taste. Pour into the tart crust, smoothing the top. Sprinkle with pine nuts.
    Bake for 20-25 mins, until the filling is just set. Cool in pan for 10 mins. Serve warm or at room temperature with salad.
