Roast Turkey With Stuffing - cooking recipe

2 tsp plus 2 tbsp olive oil
4 slices bacon, chopped
1 large onion, finely chopped
2 cloves garlic, crushed
2 tbsp thyme leaves
1 lb ground pork
3 cups fresh breadcrumbs
1/2 cup mixed dried fruit
1/2 cup coarsely chopped toasted macadamias
1 None egg, lightly beaten
1 None whole turkey (about 9 lbs)
Preparation

Preheat the oven to 350\u00b0F.
Heat 2 tsp of the oil in a medium skillet on high heat. Saute bacon for 2-3 mins. Add onion and garlic. Saute for a further 3-4 mins, until softened. Stir in thyme. Transfer to a large bowl and cool.
Mix ground pork, breadcrumbs, fruit, nuts and egg into bacon mixture until combined. Season.
Using fingers, carefully separate skin from breast and thighs of turkey and push stuffing under skin. Rub turkey with remaining 2 tbsp oil. Season. Place on a rack, breast side up, in a roasting pan.
Roast for 2 1/2 hours (allow 20 mins per 1 lb), basting occasionally, until juices run clear when tested with a skewer. Cover loosely with foil if skin becomes too brown. Transfer to a platter. Let stand, covered loosely with foil, for 15 mins. Use pan juices to make gravy. Carve turkey and serve with gravy.
