Vegetarian White Bean Ragout - cooking recipe
Ingredients

330 ml light beer
400 ml vegetable stock
2 medium onions, finely diced
3 cloves garlic, finely chopped
2 None red peppers, diced
2 None chilli peppers, finely diced
4 tbsp white wine vinegar
1 bunch coriander, chopped
2 tins butter beans
1 tsp smoked paprika
1/2 tsp oregano
2-4 tbsp lime juice
Preparation

Bring the beer, stock, onions, garlic, peppers and chili pepper to a boil, cover and simmer for about 5 mins.
Reserve 1 tbsp of cilantro for garnish and mix the rest with the vinegar. Add this to the vegetables along with the beans, paprika, oregano and lime juice to taste. Simmer for about 10 mins, seasoning with salt and pepper. Sprinkle with the reserved cilantro to serve.
