White Chocolate, Pineapple And Coconut Bars - cooking recipe

6 tbsp (3/4 stick) butter, chopped coarsely
8 oz white chocolate, coarsely chopped
1 can (16 oz) crushed pineapple in natural juice
1/2 cup granulated sugar
2 None eggs
1 1/2 cups flour
1/2 cup self-rising flour
1 cup flaked coconut
1 1/2 cups powdered sugar

Preheat the oven to 325\u00b0F. Grease and line a 12 x 8-inch baking pan with parchment paper, extending paper above long sides for handles.
Stir butter and chocolate in medium saucepan on low heat until smooth. Cool for 10 mins.
Meanwhile, drain pineapple well over medium bowl. Reserve 2 tbsp juice.
Stir granulated sugar, eggs, sifted flours, 1/2 cup of the coconut and drained pineapple into chocolate mixture. Spread into prepared pan.
Bake about 35 mins. Cool completely on pan on wire rack.
Meanwhile, sift powdered sugar into medium heatproof bowl; stir in reserved pineapple juice. Place bowl over medium saucepan of simmering water; stir until icing is spreadable. Spread icing over top of dessert; sprinkle with remaining 1/2 cup coconut. Let stand at room temperature until icing sets before cutting into bars.
