Sesame Chicken With Corn And Potato Salad - cooking recipe
Ingredients

1 None chicken breast, sliced lengthwise into 6 strips
1/4 cup sesame seeds
2 tbsp vegetable or olive oil
4 None baby potatoes, thinly sliced
1 1/2 cups canned corn kernels, drained
1/2 None small red bell pepper, thinly sliced
2 None spring onions, thinly sliced
1/4 cup sour cream
1 tbsp lemon juice
2 tbsp fresh cilantro, chopped
Preparation

Coat chicken in sesame seeds. Set aside.
Heat oil in a frying pan over medium heat. Add potatoes and cook for 3 mins, or until golden brown and cooked through. Set aside. Add corn, red pepper and onions. Season and toss to combine. Add chicken and saute for 3-4 mins, or until golden. Mix with potatoes and set aside.
Whisk together sour cream and lemon juice. Add 1 tbsp cilantro. Distribute salad between serving plates. Top with chicken, sour cream and remaining cilantro. Serve immediately.
