Cherry Parfait With Crunchy Sesame Topping - cooking recipe

1/4 cup sesame seeds
1/2 cup rolled oats
1/4 cup demerara sugar or packed light brown sugar
1 1/4 cups plain yogurt
1 1/4 cups mascarpone cheese
2 tbsp ginger in syrup, drained and chopped
1 lb cherries, halved and pitted
Preparation

Combine sesame seeds and rolled oats in a small skillet. Toast on medium heat for 5 mins, shaking pan frequently, until lightly browned. Remove from pan; cool. Mix well with sugar.
Gently combine yogurt and mascarpone in a medium bowl until smooth. Stir in chopped ginger.
Divide cherries among 4 serving bowls or glasses. Top with yogurt mixture. Sprinkle with sesame seed and oat topping. Serve immediately.
