Fish Milanese - cooking recipe

Ingredients
    1 None small Spanish onion, chopped finely
    2 tbsp lemon juice
    1/3 cup olive oil, plus 1 tbsp
    4 None fish fillets
    1/2 cup all-purpose flour
    2 None large eggs, beaten lightly
    1 tbsp milk
    1 cup dried breadcrumbs
    1/2 cup butter
    1 clove garlic, minced
    2 tsp fresh parsley leaves, finely chopped
Preparation
    Combine onion, lemon juice and 1/3 cup oil in a medium bowl. Add fish and turn to coat. Cover and chill for 1 hour, turning occasionally.
    Remove fish from marinade. Coat lightly with flour, shaking off excess. Combine eggs and milk in a small bowl. Dip fish into egg mixture then coat in breadcrumbs.
    Heat remaining oil and 1/4 cup butter in a large frying pan. Cook fish for 3 mins per side, or until cooked to your liking. Drain on paper towels..
    Heat remaining butter in a small saucepan. Cook garlic until butter turns light golden brown. Add parsley. Pour browned butter over fish to serve.
