Herbed Orzo And Tuna Salad - cooking recipe

Ingredients
    1 pkg (16 oz) orzo pasta
    3 cans (5 oz each) tuna in olive oil
    2 large tomatoes, chopped
    7 oz feta cheese, crumbled
    1 cup baby arugula leaves
    1/2 cup fresh flat-leaf parsley leaves
    1/2 cup fresh mint leaves
    1/2 cup fresh basil leaves
    1/2 clove garlic, crushed
    1/4 cup lemon juice
Preparation
    Cook orzo in a large saucepan of boiling salted water for 3-4 mins or until tender. Drain. Refresh under cold water. Transfer to a large bowl.
    Drain tuna, reserving oil. Flake the tuna and add to orzo. Stir in tomato, feta and arugula. Season.
    Process parsley, mint, basil, garlic, lemon juice and reserved tuna oil in a food processor until smooth. Season. Pour herb dressing over salad ingredients and toss to combine.
