Roast Beef Baguettes - cooking recipe
Ingredients

1/2 cup mayonnaise, mustard or horseradish cream
1 None baguette, cut into 8 pieces, each piece \"butterflied\"
8 slices rare roast beef
8 slices Swiss cheese
1 None tomato, chopped
1 None Persian cucumber, chopped
2 oz feta cheese, crumbled
None None baby arugula, to serve
Preparation

Spread mayonnaise inside each baguette sandwich. Add a slice of beef and cheese to each.
In a small bowl, mix together tomato, cucumber and feta. Spoon into baguette sandwiches and season to taste.
Wrap in plastic wrap and keep cool until required. Serve topped with arugula.
