Asparagus Frittata - cooking recipe

Ingredients
    14 oz new potatoes, scrubbed
    4 None eggs
    1/3 cup milk
    1 tbsp chopped parsley
    1 tbsp olive oil
    1 small onion, finely chopped
    11 oz asparagus, trimmed
    None None Edible flower petals, to garnish (optional)
Preparation
    Cook the potatoes in boiling salted water for 15-20 mins. Drain and rinse under cold water. Cut into thick slices.
    Preheat the oven to 400\u00b0F. Beat the eggs with the milk. Stir in the parsley and season with salt and freshly ground black pepper.
    Heat the oil in an 9 inch oven-proof skillet on medium heat. Add the onion, asparagus and potato. Cook and stir for 5 mins. Pour the egg mixture over the top. Reduce the heat to low and cook for 3-5 mins.
    Transfer to the oven and bake for 10-15 mins until cooked through. Garnish with edible flower petals (if using).
