Potato And Pesto Gratin - cooking recipe

Ingredients
    2 lbs potatoes, peeled and thinly sliced
    1 tub (7 oz) pesto sauce
    5 oz mozzarella cheese, thinly sliced
Preparation
    Soak the potato slices in a large bowl of cold water for 1 hour.
    Preheat the oven to 350\u00b0F. Drain the potatoes well and pat dry with paper towels. Place 1/3 of the potato slices in the bottom of a 6-cup baking dish. Spread with 1/3 of the pesto. Repeat layers 2 more times, ending with a layer of pesto. Arrange mozzarella slices over the top. Cover the dish with foil.
    Bake for 1 hour. Remove the foil. Bake for 20-25 mins until the potatoes are tender and the cheese is golden.
