Cranberry Almond Oatmeal Cookies - cooking recipe

Ingredients
    2 sticks, plus 2 tbsp butter, softened
    1 cup raw sugar
    1 large egg
    2 tsp vanilla extract
    1/2 tsp finely grated orange zest
    1/3 cup all-purpose flour, sifted
    1 1/4 cups whole wheat flour
    2/3 cup sliced almonds
    3/4 cup dried cranberries
    1/2 cup rolled oats
Preparation
    Preheat oven to 400\u00b0F. Line two baking sheets with parchment.
    Cream butter and sugar in bowl using electric mixer for a few mins until pale and creamy. Add egg, vanilla and zest, and beat to combine.
    Add flours and process until just combined. Remove from mixer and add almonds, cranberries, and oats; stir to combine.
    Roll 24 tbsps of the mixture into balls and place on lined trays, leaving a little space between cookies to allow for spreading. Flatten slightly with your fingertips and bake for 20 to 22 mins until lightly golden, swapping the trays around after 12 mins. Allow to cool before serving.
