Crab Stir Fry With Ginger And Chili - cooking recipe

1/4 cup vegetable oil
4 None uncooked crabs, cleaned, quartered
2 tbsp ginger, grated
3 None small red chilies, finely chopped
3 cloves garlic, finely chopped
2 None large tomatoes, finely chopped
1/4 cup rice wine vinegar
2 tbsp Cilantro, chopped, plus extra to serve
Preparation

Heat oil in a large wok or frying pan on high. Stir-fry crab segments for 4-5 mins, tossing gently until shells turn orange and meat is almost cooked through.
Add ginger, chili and garlic to wok. Stir fry for 1 min, until fragrant. Stir in tomato, vinegar and cilantro. Stir fry for 2-3 mins, until cooked, tossing frequently. Serve crab with sauce and extra cilantro.
