Prawn Quesadillas - cooking recipe

16 None prawns, peeled, deveined and chopped
2 tbsp lime juice
1 tbsp olive oil
2 cobs corn, kernels removed
1 None small red bell pepper, finely diced
2 None spring onions, finely chopped
1/3 cup sour cream
4 None flour tortillas
2.5 oz Mexican cheese, grated
1/2 cup salsa
2-3 drops hot sauce
2 tbsp fresh cilantro, chopped + extra sprigs, to serve
Preparation

In a bowl, combine prawns, 1 tbsp lime juice and olive oil. Heat a large frying pan over high heat, add prawns and marinade and cook for 1-2 mins. Remove from heat. Add corn and red pepper and cook for 3-4 mins. Return prawns to pan and add spring onion. Spread sour cream over tortillas and distribute prawn mixture over top. Sprinkle with cheese then fold in 1/2.
Meanwhile, for cilantro-lime salsa, combine salsa, remaining lime juice and hot sauce. Heat over low heat, stirring. Add chopped cilantro. Set aside.
Heat a large frying pan over high heat. Spray with oil then cook tortillas for 2 mins per side, until cheese melts and tortillas are crisp. Cut into wedges and serve with cilantro-lime salsa and fresh cilantro sprigs.
