Mustard And Herb Crusted Chicken With Tomatoes - cooking recipe

Ingredients
    2 tbsp honey mustard
    1 None egg
    2 tbsp fresh parsley leaves, chopped
    2 tsp fresh thyme leaves, chopped, plus fresh sprigs to garnish
    8 oz potatoes, finely grated
    1/2 cup breadcrumbs
    2 oz Parmesan cheese, grated
    1 pinch ground turmeric
    4 (6 oz) chicken breasts
    4 tbsp olive oil
    1 None onion, finely chopped
    1 lb cherry tomatoes
Preparation
    Preheat oven to 350\u00b0F. Combine mustard, egg, herbs, potatoes, breadcrumbs, Parmesan and turmeric. Season. Coat chicken breasts. Transfer to a baking dish and bake for 25 mins.
    Heat oil in a frying pan. Saute onion for 2 mins. Add tomatoes and season. Cook for 2-3 mins, until tomatoes are soft.
    Remove chicken from oven and cut into thick slices. Serve with tomatoes and onions, garnished with thyme sprigs.
