Baked Penne With Sweet Potato And Spinach - cooking recipe

Ingredients
    2 medium red onions, cut into wedges
    2 small sweet potatoes, peeled and thickly sliced
    2 tbsp olive oil
    13 oz penne pasta
    8 oz frozen spinach, thawed and drained
    1 1/2 cups ricotta cheese
    1 clove garlic, crushed
    1/4 cup light cream
    1 can (28 oz) crushed tomatoes
    1/4 cup pine nuts
    1/2 cup finely grated Parmesan cheese
Preparation
    Preheat the oven to 450\u00b0F. Grease a 3-quart baking dish.
    Toss the onion, sweet potato and oil in a large baking pan; season. Roast, uncovered, stirring once, for 25 mins or until the vegetables are tender.
    Meanwhile, cook the pasta in a large saucepan of boiling water according to package directions; drain.
    Combine the pasta in a large bowl with the spinach, ricotta, garlic, cream and tomatoes; season. Spread roasted vegetables in the prepared dish. Top with pasta mixture; sprinkle with nuts and Parmesan.
    Bake, covered, for 5 mins. Uncover and bake for a further 5 mins or until browned.
