Ingredients

1 2/3 cups flour
1/3 cup sugar
1 oz shredded coconut
1 2/3 cups milk
2 None large egg yolks
3 cups vegetable oil, for deep frying
4 None bananas, halved lengthwise, cut into 1 inch pieces
None None powdered sugar, for dusting
None None vanilla ice cream, to serve
None None lime wedges, to serve
Preparation

For the batter, combine flour, sugar and coconut. Make a well in center and gradually whisk in combined milk and egg yolks.
Heat oil in a large saucepan on medium, until a drop of batter sizzles immediately. Coat banana pieces in batter, allowing excess to drip off. Add to oil in batches and cook 3-5 mins, turning, until golden. Drain on paper towels. Dust with powdered sugar and serve hot with ice cream and lime wedges.
