Mango Chicken Sandwiches - cooking recipe

Ingredients
    1 cup mango and ginger chutney, plus more, to serve
    1/2 None lime, zested and juiced
    1 lb boneless chicken thighs, trimmed, flattened
    2/3 cup Greek yogurt
    1 tsp curry powder
    4 None sandwich rolls, split, toasted
    2 None tomatoes, sliced
    1 1/2 cups baby spinach leaves
    2/3 cup cilantro leaves
Preparation
    In a small bowl, combine chutney and lime juice.
    Add chicken; toss to coat well. Season to taste. Set aside until required.
    Spray an outdoor grill or grill pan with oil; preheat on high. Cook chicken 2-3 minutes each side, until cooked through.
    In a bowl, combine yogurt, lime zest, and curry powder; season to taste.
    Top the bottom of each roll with tomato, chicken, spinach, and cilantro. Finish with a dollop of curry yogurt.
    Serve burgers with extra chutney.
