Chicken, Preserved Lemon And Spinach Sausage Rolls - cooking recipe

Ingredients
    5 oz spinach leaves
    14 oz ground chicken
    1 1/2 tbsp preserved lemon peel, finely chopped
    2 None eggs
    1/2 cup stale breadcrumbs
    1/4 cup grated Cheddar cheese
    2 tbsp finely chopped flat-leaf parsley
    2 sheets frozen puff pastry, thawed
    1 tbsp sesame seeds
Preparation
    Place spinach in a large microwave-safe bowl. Microwave, covered, on high (100%) for 2 mins or until wilted. When cool enough to handle, squeeze out excess moisture then chop spinach coarsely.
    Combine spinach, chicken, preserved lemon peel, 1 egg, breadcrumbs, Cheddar cheese and parsley in a large bowl; season.
    Preheat the oven to 425\u00b0F. Line 2 baking pans with parchment paper. Cut each pastry sheet into 4 squares. Place 2-3 tbsp chicken mixture along one edge of each pastry square; roll to enclose. Place rolls, seam-side down, on prepared pans.
    Lightly beat remaining egg in a small bowl with a fork. Brush pastry with egg then sprinkle with seeds.
    Bake for 20 mins or until puffed and browned.
