Ingredients

10 oz silken tofu
1 tbsp light agave syrup
1 tsp vanilla extract
1 tsp finely grated lemon peel
1/4 cup fresh passionfruit pulp, plus additional 1 tbsp, to serve
1 tbsp fresh mint leaves
1 tbsp flaked coconut, toasted
Preparation

Blend or process tofu, syrup, vanilla and lemon peel until smooth. Stir into passionfruit. Spoon mixture into two 1-cup serving glasses. Refrigerate for 2 hours.
Serve mousse topped with mint, additional passionfruit and coconut.
