Lemon Butter And Almond Bars - cooking recipe

1 cup butter, softened, chopped
2 tsp vanilla extract
1 2/3 cups granulated sugar
3/4 cup ground almonds
2 1/4 cups all-purpose flour, sifted
1/3 cup sliced almonds, to sprinkle

1 tsp lemon zest
2/3 cup lemon juice
1 1/2 cups granulated sugar
1 cup unsalted butter, chopped
4 None large eggs, beaten lightly, strained

Preheat oven to 400\u00b0F. Grease and line a 10x13 inch rimmed baking tray with parchment paper, extending paper 2 inches over long sides.
Beat butter, vanilla and sugar until light and fluffy. Add ground almonds and flour and mix until just combined. Wrap 1/3 of dough in plastic wrap and chill. Press remaining dough into base of prepared pan. Bake for 12 mins, or until golden brown. Let cool for 10 mins.
Meanwhile, to make the lemon butter, combine all ingredients in a medium heavy-bottomed saucepan over very low heat. Cook for 10 mins, or until thickened. Transfer to a heatproof bowl, cover surface directly with plastic wrap and chill for 2-3 hours, or until thick.
Spread cooled lemon butter over tart base. Crumble reserved dough over top and sprinkle with sliced almonds. Bake for 25 mins, or until browned. Let cool in pan then chill until cold.
Remove from pan and cut into 16 pieces.
