Smoked Salmon, Asparagus And Brie Omelette - cooking recipe

Ingredients
    1 tbsp butter
    2 None eggs, lightly whisked
    2 slices smoked salmon, torn
    1 oz Brie cheese, thinly sliced
    4 spears asparagus, trimmed, halved lengthwise, blanched
    1 None green onion, thinly sliced
    None None mixed greens, to serve
Preparation
    Melt butter in an 8 inch nonstick frying pan over medium heat. Season eggs then add to pan, tilting pan to cover base. Using a spatula, quickly draw cooked egg back from edge of pan to allow uncooked egg to run underneath.
    When almost set, top with salmon, Brie, asparagus and green onion. Fold to enclose filling. Cook for 1 min, or until cheese softens. Slide onto a plate and serve with mixed greens.
