Shrimp And Avocado Salad With Ginger Dressing - cooking recipe

Ingredients
    2 1/4 lb cooked shrimp, peeled, deveined, halved lengthwise
    7 oz snow peas, thinly sliced
    1 bunch fresh chives, chopped
    3.5 oz baby spinach leaves
    1 None medium avocado, peeled, pitted, sliced
    None None FOR THE GINGER DRESSING
    2 1/2 tbsp grated fresh ginger
    1/3 cup olive oil
    2 tbsp lemon juice
    1 tsp granulated sugar
Preparation
    Combine shrimp, snow peas, chives, spinach and avocado in a large bowl.
    To make the ginger dressing, press grated ginger between 2 spoons set over a medium bowl. Reserve juice in bowl, discard ginger solids. Whisk in olive oil, lemon juice and sugar. Season.
    Just before serving, pour dressing over salad and toss to combine. Season.
