Tandoori Chicken Salad With Spiced Yogurt - cooking recipe

Ingredients
    1/4 cup tandoori paste
    1/4 cup plain yogurt
    1 3/4 lbs boneless skinless chicken breasts
    1 tbsp vegetable oil
    5 oz baby spinach leaves
    2 None cucumbers, thickly sliced
    4 oz cherry tomatoes, halved
    1 cup firmly packed fresh mint leaves

    1 clove garlic, crushed
    3/4 cup plain yogurt
    1 tbsp lemon juice
    1 tsp ground cumin
    1 tsp ground coriander
Preparation
    Combine paste and yogurt in a bowl. Add chicken and turn to coat.
    For the spiced yogurt, combine all ingredients in a small bowl. Season to taste.
    Heat oil in a large skillet on medium heat. Season chicken. Cook, in batches, for 5 mins, or until browned all over and just cooked through.
    Place chicken in a serving bowl. Add spinach, cucumber, tomatoes and mint; toss to combine. Drizzle with spiced yogurt and serve.
