Corn Fritters With Smoked Salmon - cooking recipe

Ingredients
    1/4 cup all-purpose flour
    1 tbsp rice flour
    1/2 tsp baking powder
    1/2 tsp mild or smoked paprika
    1/4 tsp salt
    1 None large egg, lightly beaten
    1/4 cup milk
    8.5 oz corn kernels
    2 None spring onions, finely sliced
    2 tbsp fresh cilantro, finely chopped
    1 None medium avocado, thinly sliced
    3.5 oz smoked salmon, thinly sliced
Preparation
    Sift flour, baking powder, paprika and salt into a medium bowl. Gradually whisk in egg and milk until smooth. Stir in corn, onions and cilantro. Season.
    Lightly oil a large frying pan and place over medium heat. Working in batches, drop 1 tbsp batter for each fritter into pan and cook until browned lightly on both sides.
    Serve fritters topped with avocado and smoked salmon.
