Sweet Potato And Pecan Loaf - cooking recipe

1 cup butter, softened
3/4 cup brown sugar
2 None large eggs
3/4 cup pecans, roughly chopped
1/2 cup desiccated coconut
7 oz sweet potatoes, cooked, mashed, cooled
1 2/3 cups self-rising flour, sifted
1/2 cup milk
Preparation

Preheat oven to 325\u00b0F. Grease an 8x5 inch loaf pan. Line base and long sides with parchment paper, extending paper 3/4 inch over sides.
Beat butter, sugar and eggs until just combined. Fold in nuts, coconut and mashed sweet potato. Stir in flour and milk, in 2 batches. Transfer to prepared pan and bake for 1 hour 40 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool completely.
