Couscous And Carrot Patties With Sesame Salad - cooking recipe

Ingredients
    200 g couscous
    100 g carrots, peeled and finely grated
    200 g ricotta cheese
    1 None medium egg, beaten
    1-2 tsp curry powder
    5-7 tbsp sunflower oil
    2 None cucumbers
    2 None chillis, deseeded and cut into thin strips
    1/2 bunch coriander, leaves removed and chopped
    1 None red onion, peeled and cut into thin strips
    3 tbsp rice vinegar
    1 tbsp toasted sesame oil
Preparation
    Prepare couscous according to package instructions then let cool. Once cool, combine with carrot, ricotta, egg and curry powder and season. Divide into 16 patties. Heat oil in a nonstick frying pan and fry patties, turning, until golden brown, working in batches if necessary.
    Meanwhile, mix vinegar with sesame oil and 1-2 tbsp canola oil and season. Toss with cilantro, chili, onion and cucumber. Serve patties on a plate with salad on the side.
