Pineapple With Pistachio Praline - cooking recipe

1/3 cup toasted pistachios, roughly chopped
1/2 cup granulated sugar
1 None small pineapple, peeled, sliced into 12 rounds
2 tbsp rum
Preparation

Lightly coat a baking tray with oil. Scatter nuts over tray. Gently heat sugar and 2 tbsp water until melted. Bring to a boil and cook, without stirring, for 6 mins, or until golden brown. Carefully pour over nuts. Tilt tray to spread out thinly. Set aside to cool. Break into pieces then chop.
Arrange pineapple slices on serving plates. Drizzle with rum. Sprinkle with praline.
