Baked Mushrooms With Anchovy Breadcrumbs - cooking recipe

Ingredients
    4 None Portobello mushrooms, stems removed
    1 (2 oz) can anchovy fillets in oil
    2 cloves garlic, minced
    1/2 cup fresh breadcrumbs
    1 tbsp fresh thyme leaves
Preparation
    Preheat oven to 350\u00b0F. Place mushrooms on an oiled baking tray. Roast for 10 mins, or until softened.
    Meanwhile, cook anchovy fillets and their oil in a frying pan over low heat for 1-2 mins, breaking up with a wooden spoon. Add garlic and breadcrumbs. Increase heat to medium and cook for 5 mins, stirring, until golden and crisp. Stir in thyme. Spoon over cooked mushrooms. Serve.
