Mini Honey Cheesecakes - cooking recipe

Ingredients
    1 (9 oz) tub ricotta cheese
    1/3 cup granulated sugar
    1/2 cup honey, plus extra to serve
    4 None large eggs
    1 tsp ground cinnamon
    1 None lemon, zested
    None None heavy cream or mascarpone, to serve
    None None strawberries, to serve
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 6-cup friand pan (or 8-cup muffin pan).
    In a large bowl, mix ricotta, sugar and honey until smooth. Add eggs, 1 at a time, beating well after each addition. Stir in ground cinnamon and lemon zest. Transfer to prepared pan and bake for 20-25 mins, or until firm. Let cool.
    Serve topped with extra honey, heavy cream or mascarpone and strawberries.
