Spring Succotash - cooking recipe

Ingredients
    4-5 tbsp olive oil
    2 cups diced ham
    2 None diced bell peppers
    2 cups fresh or frozen corn kernels
    2-3 None chopped spring onions
    2 cups blanched soybeans, shucked
    1 None lemon, juiced
    2 tbsp chopped fresh mint or parsley
Preparation
    Heat olive oil over medium-high heat in a large saute pan. Saute ham and peppers until ham begins to brown, about 5 mins. Add corn and spring onions and toss to combine. Saute for 2 mins. Add soybeans and cook for 1 min. Remove from heat and add lemon juice. Season. Cover pan and set aside for 2 mins, to steam.
    Add mint and toss to combine. Serve hot or at room temperature.
