Beef, Onion And Potato Patties - cooking recipe

Ingredients
    2 lb waxy potatoes, peeled, cut into 2 inch pieces
    4 None beef sausages, casings removed
    1 None medium onion, thinly sliced
    2 None eggs, lightly beaten
    2 heads baby romaine lettuce, thinly sliced into wedges lengthwise
    7 oz mixed tomatoes, halved
    2 tbsp vegetable or olive oil
    1/2 tbsp red wine vinegar
Preparation
    Place potato in a microwave-safe dish, cover and microwave on High (100%) for 7 mins, or until just tender. Let cool slightly then coarsely grate.
    Heat a frying pan over medium-high heat, add sausage and onion and cook for 5 mins, or until browned and cooked through. Combine with grated potato, add egg and stir gently with a fork until just combined. Season. Reduce heat to medium. Shape potato mixture into 8 patties and cook for 3-4 mins per side, or until golden and crispy.
    Combine remaining ingredients and season. Serve with patties.
