Breakfast Burritos - cooking recipe

Ingredients
    3 tbsp butter
    5.5 oz ham, diced
    6 None scallions, trimmed and chopped
    4 None soft flour tortillas
    8 None medium eggs, room temperature
    2 tbsp cream
    3.5 oz cheddar, grated
    1 tbsp parsley, chopped
    2 oz feta cheese, crumbled (optional)
    1/3 cup cilantro, chopped (optional)
    None None Hot sauce such as Tabasco, to serve
Preparation
    Heat 1 tbsp of butter in a small frying pan and add the ham. Cook for several minutes until browned, then add the scallions. Cook for 3-4 mins, just until the scallions start to wilt. Turn off the heat.
    Wrap the tortillas in foil and place them in the oven on low heat to warm.
    Whisk the eggs with the cream, ham and scallions and season to taste. Melt 2 tbsp of butter in a medium frying pan over low heat. Add the eggs and cook for about 7 mins, stirring occasionally. Sprinkle with cheddar and parsley.
    Remove the tortillas from the oven, spoon on the scrambled eggs and add the feta and cilantro, if using. Sprinkle with hot sauce, roll up and serve.
