Almond Strudel With Dried Fruit - cooking recipe

Ingredients
    2 None large eggs, 1 separated
    1 tsp almond extract
    1/4 oz active dry yeast
    3 cups all-purpose flour
    1 tsp salt
    1/2 cup milk
    1/4 cup honey
    11 tbsp softened butter
    6 tbsp cinnamon sugar
    1/2 cup sweetened dried cranberries
    1/2 cup yellow raisins
    6 tbsp sliced almonds
    2 tsp pearl sugar
Preparation
    Combine 1 whole egg, egg yolk and almond extract. Set aside. Combine 1/2 cup warm water, yeast and a pinch of sugar. Set aside for 5 mins.
    Meanwhile, combine flour and salt. Combine milk, honey and 8 tbsp butter. Place over medium heat and mix until butter begins to melt. Remove from heat and stir until butter completely melts. Add to dry ingredients along with egg mixture and yeast mixture. Mix until dough just comes together then transfer to a greased bowl, cover and set aside to proof for 1 hour, or until doubled in size.
    Turn dough out onto a floured work surface and roll into a 17x14 inch rectangle. Spread remaining softened butter over dough then sprinkle with cinnamon sugar, cranberries, raisins and 4 tbsp almonds. Roll up and transfer to a parchment-lined baking sheet. Pinch edges together. With scissors or a sharp knife, cut slashes halfway through dough about 2 inches apart. Cover and let rest for 30 mins.
    Preheat oven to 350\u00b0F. Beat egg white until foamy then brush over dough, sprinkle with pearl sugar and remaining almonds. Bake for 25-30 mins, or until a thermometer inserted in the center of dough reads 190\u00b0F.
