Rice With Chicken Peas And Califlower - cooking recipe

Ingredients
    1 1/2 tbsp olive oil
    14 oz boneless skinless chicken breasts, cut into thick strips
    14 oz cauliflower, cut into florets
    1 None onion, finely sliced
    2 tsp cumin seeds
    2 cups basmati rice
    4 cups chicken stock, warmed
    1 pkg (16 oz) frozen peas
Preparation
    Heat 1 tbsp of the oil in a deep skillet on high heat. Cook chicken in batches for 3 mins until just browned. Remove from pan. Add cauliflower and saute for 5-7 mins until golden. Remove from pan.
    Heat remaining oil in same pan on medium heat. Cook onion, stirring, for 3 mins, until softened. Stir in cumin seeds and rice, cook for 2 mins, stirring, until rice is translucent. Stir in stock and chicken. Season.
    Top with peas and cauliflower and bring to a boil. Reduce heat to low. Cover and simmer for 15 mins until liquid is absorbed and rice is cooked.
