Ingredients

2 cups dried apricots
4 None cardamom pods
4 1/2 cups granulated sugar
1/2 cup lemon juice
Preparation

Combine apricots, 2 cups water and cardamom in a bowl. Cover with plastic wrap and let soak overnight.
Preheat oven to 350\u00b0F. Place a small plate in the freezer. Drain apricots, reserving liquid. Thinly slice apricots. Place in a heavy-bottomed saucepan with reserved liquid. Bring to a simmer over medium heat then reduce heat to low and simmer for 15-20 mins, until fruit softens. Remove cardamom pods.
Meanwhile, line a baking tray with parchment paper. Spread sugar over tray and bake for 4-5 mins, until heated through. Add to saucepan along with lemon juice. Stir over low heat until sugar dissolves. Increase heat and bring to a boil. Boil for 20-25 mins, until a drop of jam placed on the frozen plate sets up quickly. Let cool for 5 mins.
