Warm Caramel Sundaes - cooking recipe

8 tbsp (1 stick) butter, chopped
1 1/4 cups heavy cream
1 cup firmly packed brown sugar
1 tbsp cornstarch, blended with 1 tbsp water
1 quart vanilla ice cream
4 oz caramels, chopped
Preparation

For the caramel sauce, combine the butter, cream and sugar in a medium saucepan. Stir on low heat until the butter is melted.
Stir in the cornstarch mixture; bring to a boil. Reduce heat to low; simmer for 3 mins or until slightly thickened.
Divide scoops of the ice cream among the serving bowls. Top with the warm caramel sauce and sprinkle with chopped caramels. Store leftover caramel sauce in refrigerator.
