Sausage Fried Rice - cooking recipe

1 tbsp vegetable or peanut oil
2 None large eggs, lightly whisked
9 oz thin chicken sausages, halved crosswise
2 oz bacon, diced
18 oz frozen stir-fry vegetables
1 tbsp grated fresh ginger
16 oz cooked jasmine rice
2 tbsp soy sauce
2 None spring onions, thinly sliced diagonally
Preparation

Heat a wok or large frying pan over high heat. Add 1 tsp oil and swirl to coat surface. Add eggs and tilt to cover base. Cook for 1 min, or until set underneath. Flip over and cook for 30 seconds. Transfer to a cutting board and slice thinly.
Add remaining oil to wok and reduce heat to medium-high. Cook sausages for 4 mins, or until golden brown. Add bacon and cook for 2 mins, or until sausages are cooked through and bacon is crisp. Transfer sausage and bacon to a heatproof bowl. Slice sausage thinly.
Wipe wok clean. Stir-fry vegetables and ginger for 5 mins, or until vegetables are tender. Add rice, soy sauce, sausage, bacon and omelet to wok. Stir-fry for 1 min, or until heated through. Serve sprinkled with spring onions.
