Onion Soup With Cheese Croutons - cooking recipe

Ingredients
    4 tbsp vegetable oil
    1 1/3 lb onions, peeled and sliced into rings
    1/2 tsp sugar
    1 tbsp flour
    2 1/2 cup vegetable stock
    2/3 cup dry white wine
    4 tbsp fresh chopped parsley
    2 None thick slices white bread
    1/2 cup Swiss cheese, grated
Preparation
    Heat the oil in a large pan and saute the onions for 10 mins until soft, adding the sugar after 5 mins. Sprinkle with flour and cook for 1 min then gradually stir in the stock and wine. Bring to a boil then reduce the heat and simmer for 8 mins. Stir in most of the parsley and season to taste with salt and freshly ground black pepper.
    Toast the bread under the broiler. Cut four circles from each slice of toast and top with the grated cheese. Broil until the cheese has melted.
    Serve the soup in warmed bowls topped with the cheese toasts and sprinkled with the rest of the parsley.
