Smoked Salmon, Egg And Rice Salad - cooking recipe
Ingredients

1 cup long-grain rice
2/3 cup frozen peas
4 tbsp honey
2 tbsp medium-hot mustard
2 tbsp lemon juice
4 tbsp olive oil
1/4 cup finely chopped fresh dill, plus more for garnish
2 3 oz packages sliced smoked salmon, cut into strips
1 small head radicchio, cut into strips
6 None hardboiled eggs, peeled and halved
Preparation

Cook the rice according to the package instructions. Rinse with cold water. Blanch the peas in boiling water for 30 seconds. Drain.
Mix the honey, mustard, lemon juice and oil. Stir in the chopped dill. Mix the rice, peas, salmon and radicchio. Arrange on 4 serving plates, top with the eggs and drizzle with the dressing. Garnish with the reserved dill.
