Potatoes With Bacon And Chanterelle Mushrooms - cooking recipe

1-2 tbsp oil
2 oz bacon, diced
1/4 lb fresh chanterelles mushrooms, halved if large
1 bunch spring onions, cut into rings
1 1/2 lbs potatoes, peeled and cut into cubes
1/2 cup dry white wine
1 1/2 cups vegetable stock
2 oz Parmesan cheese, grated
1/2 bunch arugula, chopped
Preparation

Heat the oil in a frying pan and fry the bacon. Add the mushrooms and cook for 1-2 mins. Stir in the spring onions and potatoes and season with pepper. Pour in the white wine and stock, bring to a boil, cover and simmer for 8-10 mins. Stir in 2/3 of the Parmesan until it melts. Season to taste, fold in the arugula and sprinkle with the remaining Parmesan. Serve immediately in deep dishes.
