Sirloin Steak With Salad - cooking recipe

Ingredients
    4 tbsp softened butter
    2 tbsp fried onions or crispy shallots
    5 tbsp red wine vinegar
    8 tbsp oil
    4 (7 oz) sirloin steaks, tenderized
    7 oz baby greens
    1 lb cooked beets, sliced
    7 oz baguette, thinly sliced, toasted
    3 oz Parmesan cheese, shaved
Preparation
    Preheat oven to 400\u00b0F. Combine butter and fried onions. Season then set aside. For the vinaigrette, season vinegar and add a pinch of sugar. Gradually whisk in 6 tbsp oil. Set aside.
    Heat remaining oil in a frying pan over high heat. Sear beef for 2 mins per side. Reduce heat, add onion butter and cook steaks for about 1 min. Season. Combine baby greens and beets. Toss with vinaigrette then sprinkle with Parmesan. Serve steaks with salad and warm bread.
