Fragrant Kaffir Lime Chicken Salad - cooking recipe

Ingredients
    1 tbsp fish sauce
    1 tbsp lime juice
    2 tsp brown sugar
    1 tbsp peanut oil
    14 oz boneless skinless chicken breasts, finely chopped
    2 tsp grated fresh ginger
    1 None red chili pepper, seeded and finely chopped
    4 None green onions, sliced
    4 None fresh kaffir lime leaves, finely shredded, plus additional, for garnish
    2 tbsp chopped cilantro
    8 small Romaine lettuce leaves
Preparation
    Combine fish sauce, lime juice and sugar in a small bowl; stir to dissolve the sugar. Set aside.
    Heat 1/2 the oil in a large wok or skillet on high heat. Stir-fry chicken, in 2 batches, for 2-3 mins each batch, until golden. Remove from wok and set aside.
    Return wok to a high heat. Add remaining oil, ginger and chili pepper; stir-fry for 30 seconds. Add onions and kaffir lime leaves; stir-fry for 30 seconds.
    Return chicken to wok with fish sauce mixture; toss to combine. Remove from heat; stir in cilantro. Cool slightly.
    Arrange lettuce leaves on a platter and spoon in chicken mixture. Garnish with additional kaffir lime leaves.
