Chocolate Marshmallows - cooking recipe

Ingredients
    2 1/4 cups granulated sugar
    2 tbsp powdered gelatin, bloomed in 1/2 cup cold water for 5 mins
    1/2 tsp lemon extract
    1/4 tsp yellow food coloring
    10.5 oz white chocolate, finely grated
Preparation
    Grease and line a 12x8 inch rimmed baking pan with plastic wrap.
    Bring sugar and 1 cup water to a boil. Add bloomed gelatin and boil, uncovered, for about 10 mins, until thick. Transfer to a mixer and add lemon extract and food coloring. Whisk over high speed for about 5 mins, or until mixture is very thick and holds its shape. Spread over prepared baking pan and let stand at room temperature for 2 hours, or until firm.
    Using a wet knife, cut marshmallow into 3/4 inch squares. Roll in grated white chocolate. Serve.
